Mini Corn Muffin/Bread

    I used the Jiffy corn muffin mix instead of going the traditional way of using a corn meal, flour and baking powder. I would like to see if there will be a significant difference with results. For all it is worth, the Jiffy which costs 59 cents held up to my expectations. There is no major difference. In fact, whether you use the corn meal or the Jiffy mix, it will provide you the same quality. I believe making a good muffin rely much on how you prepare and bake it.

Few tips when you choose to use “Jiffy” corn muffin mix.

First, do not over mix it (you would  want to go for a lumpy mixture). Second, you have to let the batter rest for at least 4 to 5 minutes. Third, do not overbake it– 8 minutes tops. Last but not the least, always make sure to brush the muffin with melted butter– it will make it more scrumptious.

  1. Preheat oven to 350 Farenheit.
  2. Grease or Brush muffin pan with cooking oil spray or melted butter or simply use paper baking cups for easy cleaning.

  3. Combine all ingredients. Batter should be slightly lumpy.
  4. Let the batter rest for 5 minutes.
  5. Fill muffin cups with 1 tablespoon of the batter.

  6. Bake for 8 minutes.
